A soap molecule has two ends with opposite tastes. One end is water-loving and mixes readily with water. The other is a long carbon chain that avoids water but mixes happily with oils and fats. That split personality does the entire job.

In water the molecules surround a droplet of oil — their oil-loving ends buried in the grease, their water-loving ends pointing outward. The result is a tiny sphere with a water-friendly shell. The oil can now effectively travel in water, and it rinses away.

Soap also lowers water’s surface tension, letting it penetrate the fibres of cloth or the creases of skin. That is why rubbing and giving it enough time matter — the process is not instant, and the molecules need time to surround the dirt.

This is also where soap and detergent part company. Soap is made from natural oils or fats and reacts with the calcium and magnesium in hard water to leave an insoluble scum. Detergents are synthetic, work on the same two-ended principle, and keep working in hard water.
